Deja Blue Topped Pancakes

These pancakes hit the spot when you are craving peanut butter and a stack of warm fluffy pancakes. The combination is absolutely irresistible. These pancakes are Paleo friendly, low carb and super easy to make! 



1 1/2 cup Almond Flour⁠⠀
1 tsp Baking Powder⁠⠀
1/4 tsp Salt⁠⠀
1 tsp Cinnamon⁠⠀
2 Eggs⁠⠀
2 tbsp Maple Syrup or Honey⁠⠀
1 tsp Vanilla Extract⁠⠀
1/4 cup of Milk (Can substitute Almond Milk)⁠⠀
1 tbsp butter or coconut oil for the pan⁠


1. Combine all the ingredients in a bowl and whisk until smooth.

2. Heat a skillet over medium low heat and add the butter or oil.

3. Spoon 2-3 scoops of the mixture into the pan. (Add a little extra flavor by putting blueberries in the batter for each pancake!)

4. Cook each pancake for a few minutes on one side - or until the batter starts bubbling, then flip and cook on the other side for about 2 minutes. Makes about 6-8 regular sized pancakes! ⁠⠀
Top with our Deja Blue - Blueberry Almond Butter and fresh blueberries.
